Premium dried shiitake mushrooms (Lentinula edodes) are distinguished by a slow dehydration process that preserves and enhances their aromatic compounds. Unlike fresh mushrooms, the dried version develops a much deeper umami flavour profile and a meaty texture after rehydration.

Tip: Soak it in cold water (12 hours) for the best texture and always use the soaking water as filtered broth.
